Ingredients

  • 100 g / 1 cup CEREALS & SEEDS
  • 100 g / 1 cup NUTS
  • 20 g / 4 tablespoons GRATED COCONUT
  • 54 g / 3 tablespoons AGAVE or STEVIA (or other)
  • 24 g / 2 tablespoons COCONUT OIL (or Ghee)
  • 60 ml / 4 tablespoons COCONUT MILK (or other liquid)
  • 300 g FRESH CHEESE or TOFU (Ricotta, Cottage or other)
  • 100 g/ 1 un ripe BANANA
  • 200 ml COCONUT MILK
  • ½ VAINILLA or 1 tablespoon VANILLA ESSENCE (optional)
  • 8 g/ 4 sheets UNCOLOURED GELATINE (or 1 ½ teaspoon AGAR AGAR powder)
  • 300 g AÇAÍ BANANA NATIVE BERRIES (3 sachets)
  • 100 g/ 1 un ripe BANANA
  • 100 ml COCONUT MILK
  • 54 g / 3 tablespoons AGAVE or STEVIA (or other)
  • 12 g/ 6 sheets UNCOLOURED GELATINE (or 2 teaspoons AGAR AGAR powder)

Preparation

CRUST BASE

Place the ingredients for the base in a processor and blend to a fine crumb. Transfer mixture to the pan. Press mixture firmly over the base and side of the pan. Place in the fridge for 10 minutes to chill.

LAYER 1

Soak the gelatin sheets in ice water (preferably with ice cubes) for at least 5 minutes. Meanwhile, beat all other ingredients in the blender. When the gelatin is hydrated, place in a small pan or skillet and heat quickly just to melt. Pour into the prepared pan and place in the freezer for 30 minutes or until the surface is set.

LAYER 2

Soak the gelatin sheets in ice water (preferably with ice cubes) for at least 5 minutes. Meanwhile, beat all other ingredients in the blender. When the gelatin is hydrated, place in a small pan or skillet and heat quickly just to melt. Pour into the prepared pan and place in the freezer for 4 hours. Unmold the cheesecake carefully and transfer the cheesecake to a serving plate. Top with açaí topping (recipe below), cereals, seeds, coconut, flower etc and serve.

FOR THE VEGAN AND LACTOSE FREE VERSIONS

Replace FRESH CHEESE by TOFU (or other) in the same amount and follow the same process. Replace GELATINE SHEETS by AGAR AGAR powder. Mix the agar with the coconut milk in a pan, stir well, heat over medium heat always stirring, until boiling (remove from the fire as it boils not to reduce the liquid). Cool to room temperature and beat with remaining ingredients. Follow the same process for the two layers.
